Happy Cinco de Mayo! We love this holiday at our house, not because we are Mexican, but because it gives me a reason to eat Mexican food! Any excuse for a party, that's my philosophy. Especially if it involves music and food. I'm planning to make chicken enchiladas (yes, from scratch this time) and Tres Leches cake. (Don't be too impressed - it's from a cake mix!) Viva Mexico!
